Nettle and Blackcurrant Leaf Cordial Recipe
Breaking the silence, briefly, to bring you this recipe for a delicious foraged summer drink. Nettle and blackcurrant leaf cordial. You will need:
100g (4 oz) nettle tops. (as long as they haven't started flowering or seeding)
100g blackcurrant leaves
1 kg (2lb) granulated sugar
500ml (about 1 pint) boiling water
40g (1.5 oz) citric acid
mix the sugar, water and citric acid in a large pan until sugar is dissolved. Bring to the boil and let it seethe for a few minutes.
Add the nettle and blackcurrant leaves to the boiling mix. Stir and then remove from the heat.
Keep covered in a cool dark place for 5-7 days, stirring every day. Strain and bottle. Store in the fridge. Peasy!
Dilute to taste with water - still or fizzy, or sparkling wine, or add to a GnT. James is having his with straight tap water. lovely and refreshing summery drink - sláinte!
