Good little things

The wind still blew this week - it moved to the north and brought a dusting of arctic chill with it too, but we managed out most days. Its always a thought to drag ourselves away from the warmth, get togged up, and face the cold, but always so worth the effort. There isn't really a lot on the camera roll this week, just a few shots taken on our walks, so I thought I would share a few internet links that have caught my attention this week:

I am taking part in a wonderful online retreat run facilitated by Heather from Beauty that Moves. I cant believe we are at the end of the first week already. I am so enjoying the activities and sharing from a fabulous group of like minded women. It has been a very nourishing time - and much love to my dear friend Denise for bringing me along..

I enjoyed listening to this - fascinating.

And I read this at just the right time.

One more photo on the camera phone tonight - caramelised pear skillet pie - so easy.

Line a cast iron skillet, or a pie dish with a puff pastry sheet

into a frying pan put
4 oz caster sugar
4 fl oz water
1 tsp vanilla

bring to the boil and simmer for a few minutes until caramel coloured.
add
1 oz butter
4 pears, peeled, cored and cut into eighths

stir till butter has melted and pears are nicely coated in caramel
cook for a further 5 minutes
add
1/2 tsp each of ground cinnamon and ginger

pour pears and caramel into pastry shell and cook at 200 deg C for 20 mins, until the pastry is nicely puffed up and browned.

We had ours with creme fraiche.

Wishing you all good things in the week ahead xx

Always good to get outside no matter the weather. I enjoy my walks very much and love my Winter walks as I breathe so much better.

I am enjoying Hibernate as well. I am a few days behind as work was busy last week. Hooray for a holiday today I might get caught up!!

    Have a beautiful day!!

  3. Such pretty photos. We've had some windy days here in New York as well. My father in law is from Galway, Ireland and his family that still lives there said the winds have been horrible. Hurricane force winds. We've noticed the days getting longer here so soon these blustery winter days will be a distant memory. I happen to love this kind of weather and spending more time indoors than out. Like you, not taking as many photos but I know that will change too. That pear tart looks so delicious. I pinned it to one of my Pinterest boards. : ) Have a beautiful day and thank you so much for your kind words regarding my son's friend. It truly means so much to me. XOXO

I'm so pleased you have had a nourishing time. Your photos are gorgeous. I am curious about an "online weekend retreat". How does that work?! Keeping you all in my thoughts and prayers.

    1. It works through a daily downloadable booklet with an optional activity and we share on a closed Facebook group and blog. It works really well xx

  5. Jacqui, those sky colors, those lasting stones, that light. Thank you for allowing me to see something that I yearn to see in person, yet could not at the time you took the walk with your camera along.

The caramel skillet pie, on the other hand, is something I might just be able ot manage in my tiny kitchen.

Thank you for it all, dear Jacqui. xo

  6. It is so true that when it comes to going outside at this time of year, the thought is hard and the reality is wonderful. So true of many things don't you think?

    Beautiful post :)

I had a peek at the Beauty that Moves site and I love the idea of reflection and hibernation during the winter period. sometimes I feel like I have to be all perky and full of "let's-things-done" in January and February but I really don't feel like it. I think also because we have had a mild winter and it feels more like Spring, it's a little harder to embrace Winter as a season. You have given me much to think about. I hope you and your family are keeping well and that your hospital visits are not as many now. xx

  10. Very Nice post, I always enjoy a good blog read
The recipe calls for superfine sugar... Would that be the same as icing sugar or something altogether different? Thanks - can't wait to try these!!

    1. Hi Daisy - thanks for popping in. Superfine sugar is like caster sugar, and icing sugar is called confectioners sugar in the U.S. Hope you enjoy it xxx
